We have a clear focus on Brewing beer in season using local seasonal ingredients; reducing our impact on the environment through the choices we make around ingredients, process, and packaging; and producing the freshest and best quality beer available.
By producing small batches we continue to supply our thirsty locals with the freshest beer on the market. By brewing natural beer without any additives, filtering, or pasteurization, and with close care and attention to detail in process, we continue to produce top quality beer for our community.
Community.
Our Draught Beer Range is currently only available on tap at venues who share our passion to support small local producers, mostly in our area of Central Western NSW. A focus on supplying local aligns with our values to keep the Cosmo carbon footprint as low as possible. For more information on exactly where to find our beer click here
We showcase our range monthly at several Farmers Markets where we dispense beer fresh and cold from kegs into re useable glass bottles – which customers can re-fill at Cobb and Co Cellars if they get thirsty in between markets!
Ingredients.
Our ingredients are single source where possible so we can form close working relationships with producers to understand and appreciate their products as best we can. Malted Barley is the main ingredient in beer and is all sourced from Voyager Craft Malt in The Riverina. Cosmo is committed to promoting regenerative agriculture practices and we now use Organic Malt, across the full range, grown by Sam and Chris Greenwood from Organically Greenwood near Coleambally.
Our Hops are from several sources including a small commercial grower near Bega, Ryefield Hops, who practice chemical free farming and cover cropping for natural fertility and promotion of beneficial insects. Bathurst has an early history of hop growing during European settlement as a temperate climate is required for their cultivation. Inspired by this fact Cosmo has a small hop growing collaboration underway deep in the hills around Bathurst. Our aim is to grow enough hops to produce our full range of beer. But just for now the seasonal Harvest IPA is brewed with 100% Bathurst grown hops.
Sustainability.
We are committed to reducing waste in the environment, particularly single use plastics, and make a concerted effort to avoid any kind of waste product wherever possible. We do not use single-use packaging in any of our process and, where possible, we up-cycle materials into our process instead.
Our Draught Beer range is packed into kegs (definitely re-useable!) and stored without pallet wrap. Where a pallet needs to be secured in transit, or storage, we use ratchet straps instead. The collars fixed to each fresh keg of beer, listing the details of what’s inside the keg for our customers, are hand-cut from used Malt Bags.
Our Farmhouse Beer range is packed into sturdy Champagne-style bottles which can be returned to place of purchase for collection and re-use by us. These bottles are packed and delivered to our outlets in super durable, handmade cases made from up-cycled plywood. This plywood was used as pedestrian decking on a construction job and would have been otherwise discarded. But we salvaged it to make beer boxes instead!
